black eyed peas with collard greens
Enjoy this scrumptious black eyed peas recipe w/collard greens, spices, cumin seeds & a special tomato puree, this recipe is a keeper!

This recipe is rich in garlic and spices like paprika, black pepper, cumin and coriander, and many more! Truly a delicious recipe and one that is healing to the body, this recipe is great for anyone on a whole food plant-based diet!

I absolutely love black eyed peas and this recipe combines them with collard greens, a typical combo in Southern black-eyed peas. But as usual, I like to add plethora of spices to bring more flavor, aroma and health benefits to the recipe, so here is my version!

In the video, I really wanted to spend time talking about the benefits of these ingredients, and how they help prevent or reverse cancer plus other diseases related to inflammation. When you see a video, you are getting a lot of value for your 10-mins of time - you not only get a delicious, amazing recipe but you also are getting wisdom on what ingredients to use and why, as in how they helped me prevent cancer from coming back plus how they will help you stay healthy.

I talk a lot about the importance of using garlic and onions in this recipe video and this is because, all my recipes have lot of onions and garlic, so I wanted to explain the science and my reasoning behind it. Watch this video and you will learn a lot, and then, go make this recipe and enjoy with a rice pilaf or quinoa or a lettuce wrap! This is 'protein-done-right!' recipe! LOL.

To make less quantity - Simply add 1/2 the amount of black-eyed peas and half the spices as well. I would not reduce on onions, garlic and even tomatoes or collard greens!

Ingredients -

1. Organic onions - 2 medium or large per choice
2. Collard greens - 1 bunch
3. Black-eyed peas - 16 oz. (1 lb.)
4. Organic tomatoes - 4
5. Garlic - 3 small

Spices & oils -

1. Organic, unrefined coconut oil - 6 full Tablespoons
2. Organic Sea salt - per taste. Add less first, you can always adjust later.
3. Smoked paprika - 3 Teaspoons. Add less first, you can always adjust later. So, if you don't know, start with 1 teaspoon.
4. Black pepper - 2 Teaspoon
5. Cumin & coriander  powder - 1 Teaspoon
6. Curry powder - 1 Teaspoon
7. Cumin seeds - 4 Tablespoons
8. Bay leaves powder - 1 to 2 Teaspoon
9. Thyme - 1 Teaspoon

Top with -

1. Organic apple cider vinegar - 4 Tablespoons
2. Fresh lemon juice - 1 whole

Simple steps -

1. Watch the video/pics for step-by-step recipe.

Servings -

Single (Adult portion size) - This would serve approx. 5-6 servings.
2 people (Adult portion size) - approx. 3 serving each

Compost - Plz. start composting. Imagine if all of us stopped using plastic bags for such ridiculous reasons? How Earth will change overnight? If you don't have compost bin in your home, you can make one. Or, you can simply give to the plants outside. They will eat the nutrition and your garden soil will thank you for it.
