Carrot Beet Soup with Ginger
This delicious soup is perfect for Fall season. Rich in grounding vegetables like carrots, beets, etc., this soup is a perfect blend of taste & health.
Who doesn't love soups?! I know I do but it is important to take soups according to seasons because soups present a great opportunity for you to enjoy seasonal produce in a super tasty way.

This carrot beet soup is delicious. This carrot-beet soup with ginger has spices and herbs that are good for you for the Fall season also known as the Vata season in Ayurveda. This soup is rich in grounding vegetables that are helpful for windy, cooling, dry, erratic Vata season.

This delicious and beautiful looking soup has ginger, garlic, oregano, thyme, celery and many more goodies for boosting your immunity, gut health, digestion, taking away your inflammation and improving your liver and skin health.

I noticed that the tomatoes are shown in the video but omitted from the recipe, just the tomato paste. So my cooking was a little different, also because a family member hates beets, forcing me to cook them separately, then add the rest to those cooked beets just before using the immersion blender. Also forgot to buy fresh sage so had to use my dried sage. Even so, this was a winner for us! Thank you for this vata-calming soup. I HATE the fall, so it is really going to help me stay calm while the cold dry winds whip all those dead leaves around me here in the northeast.
