This cucumber raita (yogurt dish) is made with cooling Indian Black salt and cumin seed powder which is first roasted for few minutes to bring our it's aroma and flavor even more. This cucumber raita is a regular in Indian homes - enjoy this delicious raita with your meals on hot summer days and you will feel it's cooling affect with every spoon.
This raita is enjoyed with rice and lentils, naan, roti, vegetables or can be paired with wraps and quinoa or couscous. Serve this5-minutes yogurt dish to your friends and family for an al fresco lunch or dinner. Ingredients - 1. Cucumber - 1 medium or large (per choice) 2. Coconut yogurt - 6 oz. 3. Cilantro - for garnish Spices - 1. Sea salt or Indian Black Salt - 1/2 teaspoon (adjust later if needed) 2. Cumin powder - 1 Tablespoon 3. Chunky Chat masala - 1 Teaspoon 4. Paprika or Cayenne or Deggi Mirch - Per choice Simple Steps - 1. Chop the cucumbers in small pieces - don't grate it as that will make the cucumber lose lot of water and you don't want your raita to be too watery either. 2. Dry roast your cumin seed powder for a minute or two on low heat. 3. Add cucumber, yogurt, cumin seed powder, paprika, Indian Black salt (best option in summers) and chunky chat masala and mix all. 4. Garnish with some fresh cilantro leaves and serve!.
