Indian Cucumber Salad
This is THE quintessential Indian salad made with just tomatoes, cucumbers and onions and then some tempting spices; - it is so light & refreshing!
This is the 'national' salad of India - it is fair to say that since every-single-Indian-home and restaurant will have this salad to serve with the food. 

Whenever you go to an Indian restaurant, you will be served this salad with your meal and this is because every Indian grows up with this salad being served almost every single day! This salad is light, refreshing and super tasty! 

In Indian homes, when we make this salad, we don't strain out the cucumber, tomato and onion water - we drink it up because it is full of antioxidants, electrolytes as well as vital nutrients for good health and digestion. 

When this 'juice' is mixed with salt, black pepper, chat masala and lemon juice, it becomes like an elixir for the digestive tract - so do not throw the juices; drink them up! 

Ingredients - 

1. Cucumbers - 2 medium
2. Tomatoes - 1 or 2 (per choice)
3. Red onion - 1 small or medium
4. Lemon juice - 1/2 lemon 
5. Cilantro - for garnish

Spices - 

1. Sea salt or Indian Black Salt - 1/2 teaspoon (adjust later if needed)
2. Black pepper - 1 Tablespoon
3. Chunky Chat masala - 1 Teaspoon


Simple Steps -

1. Chop the cucumbers, tomatoes and onions in the shape that you like.

2. Keep all in the bowl, add the sea salt or Indian Black salt (best option in summers) and chunky chat masala.

3. Add your lemon juice and garnish with some fresh cilantro leaves. 

4. Keep the salad for few minutes and then mix it all and enjoy! 

5. Drink the antioxidant rich water at the bottom of the salad bowl - you will love the taste!
