Maggi Noodles with Veggies

Maggi Noodles Recipe
Maggi noodles are every Indian's childhood favorite. This recipe is not only tasty but very healthy with a bunch of veggies & delicious spices.

I am so happy to share one of my childhood favorites and let me tell you that Maggi noodles are every Indian's favorite at one point of time or the other!

Maggi noodles are sold everywhere in India and they come with their own Indian seasoning mix - super tasty, aromatic and with just the perfect blend of spices and herbs. I still love to enjoy Maggi noodles whenever I can, which by the way has become very rare since I avoid eating gluten or wheat items plus I really follow a very pure, fresh, healthy WFPB diet.

But still whenever I make Maggi noodles, I make them with a bunch of veggies so that they are full of fiber, antioxidants and Nature's best vitamins and minerals so at least noodles don't have to be so bland nor so unhealthy.

Adding a good amount of colorful, fresh veggies is one of the best ways to enjoy some foods that you love but are not 'healthy' exactly because besides adding color and taste to your dish, veggies also prevent blood sugar spikes! A win-win!.:)

Then we also add some healthy fats like organic coconut oil to further prevent digestive issues that often come with foods like plain noodles AND guess what?, healthy plant-based fats also prevent blood sugar spikes plus they help transport nutrients and spices to your cells!

Now, no more waiting - this is how I 'design' my recipes so that I and everyone here at TGR can enjoy them 100% guilt-free. This is a great recipe to make for your guests and it is definitely a kids-friendly recipe!

Give these noodles a try and check out the full video where I share more tips plus I also go over some healthy substitutions in place of Maggi noodles especially for those who are allergic to gluten or have Celiac's disease (hint - Maggi noodles are NOT gluten-free).

This fun recipe and the way you have improved it reminds me of how I healthy-up ramen noodles. Hopefully, the spice packets are healthier than the ones that come with most ramen, whose ingredients you should NOT read unless you want to have an instant headache! I also like sometimes to add tofu to increase protein. Thank you!

Thank you Pamela for this great comment and for appreciating my efforts in making something unhealthy and plain like noodles into something flavorful and healthy. I am sorry for the late reply and will be replying to your email today or tomorrow. Will write more in that...

Thanks for the idea of adding tofu! Love that as I really love tofu (but hate the plastic containers it comes in so have reduced my consumption). All the love, Somya. 💖💖💘

Yes, it gets harder and harder to find tofu not wrapped in plastic. When Whole Foods opened nearby, they killed Apple Farms and it closed. Apple Farms used to have fresh tofu in water and also bean sprouts. And really fresh poblanos and tomatillos and — I could go on and on!

LOL - I love the way you describe ramen but thankfully ramen are not part of my life since about 20 yrs?! Even maggi - I hardly eat...maybe like once in few yrs but ya, ramen are horrible! 😀

Oh wow....Never heard of Apple Farms but I like the concept of tofu just being in water and in Japan, that is how it is - people bring their own containers and pick it up. No wastage and no filling the landfills with the plastic! Apple Farms sounds like my kind of a place too being so natural and ecofriendly - no wonder you liked it.
