Avocado Soup w/Cilantro

Quick 5-mins recipe that delivers a silky smooth avocado soup. Tips & tricks to make this a divine recipe. A great soup for guests!
THE soup for summer time as well as winter time! What do I mean? Well, I love this soup not just because it is easy, quick, and super delicious but also because it can be served in summer as well as in winter. During summer time, you can just make as shown in the video or have it slightly chilled and in winter, to make the soup warm, all you have to do is slightly warm some water and add green peas and mix all! That's it! 

Another great point about this soup is that you can definitely make this soup when you have guests coming over and serve chilled or warm before dinner. Due to its quick and easy nature, it is great to make for both small crowds or large - without the overwhelm. Hardly any clean-up and the taste...oh gosh! Try it to believe it!

Ingredients (for 1 serving) -
​
1. Small avocado - 1 
2. Organic green peas (frozen-thawed or fresh)
3. Organic lemon juice & lemon zest

4. 2 garlic cloves
5. Mint
6. O
rganic cilantro/coriander

Spices -

1. C
ayenne
2. Organic sea salt (add less first, you can adjust later - so 1/3 teaspoon each)
3. Black pepper
4. Cumin powder

Cannot wait to make this! All of your recipes are consistently easy and so delicious. I try other vegan recipe sights. It they fall flat on flavor so you are my go to sight for ease, flair and flavor. Thanks. Going to make this tonight for my crowd on a beach vacation!!

YES! You have got to try it and make sure to get some mint as that is the 'secret' behind (besides the green peas) why this recipe is so good and cooling for the summertime. Cilantro adds the spiciness and both mint and cilantro make this recipe just ...too good! Enjoy! -Somyata.

So! My 2 teenage daughters (16 & 18) walked in starving from 2 days up at a friend's cabin. They were literally begging me for vegetables. This is not normal behavior. Picture four unsupervised teenagers for 2 days. Anyway, I had 2 perfectly ripe avocados on hand and some frozen peas so I threw together this soup quickly and easily. So good. I warmed it a bit and love the touch of heat of the cayenne as well as the hint of lemon. The perfect antidote to my kids request! Thank you Somyata, so good!

This was delicious and oh! so easy to make!

I'm going to make this soup again making one change: substituting jalapeno for the cayenne. I may be sorry but why not try? (Yes, I do like things hot!)

I've made this soup four times already. One day, I made it twice!

The third time I added too much lemon (because I love lemons) and the fourth time used too much garlic (ditto: I love garlic). I learned from my experiments that the ingredients in the original recipe are perfectly balanced; it's best not to play around too much with the recipe.as written.

It's delicious!

I still love this recipe!!

I don't know why I haven't made it in a while. It's probably because I started making some of your OTHER recipes at the same time that I had a string of not-great avocados in the stores. The new recipes took up the space in my head 😊

LOL. Well Ms.Nona - you became quiet famous yesterday because of your cute adventures with this recipe!

In fact, last night Pamela (another one of NY-kers.) messaged me and told me that she likes your adventurous spirit in the kitchen and that she tried likeyou with my other recipe that she made last night - Cabbage & Radish Recipe.

I had told her to NOT make it spicy (due to her digestive issues that she was currently experiencing) and for that she replied - "I think it was Nona who influenced my little culinary adventure tonight. 🤪"
