Have left-over bread? Even bread can be healthy if eaten this way. Quick & easy recipe that you can whip up in few minutes. One-pot!
Bread poha, as called in India, is a very common Sunday brunch as it is easy and fast to make and even pleases kids. Adding colorful, tasty veggies and just a hint of seasoning is all you need to make this recipe into a regular in your household.

Now, this recipe uses bread; and...one of the main food for inflammation and weight gain is wheat.  So, what do we do then? Simple! Switch to gluten-free high quality bread or a home-made one.

And if you are going to eat bread, then why not make it with some veggies? At least, much better option. Also, you can make bit extra and eat next day at work or for breakfast/brunch. This is a very light meal - excellent for those trying to lose weight. Load up more veggies in this dish and less bread and you are all set.

The best part is you can add any number of vegetables per your choice and make it even more healthy.
Some optional veggies are - organic corn (no conventional corn!! as it is a gmo-crop), carrots, potatoes, peas, broccoli.
Some nuts you can add are - peanuts, cashews, pine nuts.

So, just click on video or follow the steps below along with pics.

Ingredients -

1. Gluten-free bread
2. 1 green bell pepper
3. 1 red bell pepper
4. 1 yellow onion

Spices & oils -

1. Organic, UN-refined coconut oil - 4 tablespoons
2. Mustard seeds - 1 small teaspoon (start less first, if too much then they can be bitter)
3. Organic sea salt - per taste r 1/2 teaspoon first, then taste and adjust.
4. Cayenne - Optional for spice lovers. 1/3 teaspoon.
5. Red chili paste - 1/3 teaspoon

Top with -

10. Black pepper
11. Organic ketchup - 1 teaspoon

Simple steps - Follow the video or pics.

Compost - Plz. throw your veggie ends in compost pit or you can give back to plants. Feel the joy when you care for Earth! And less use of plastic bags too..:)

Enjoy your easy, light meal on this Sunday with your family and friends or just you and some good book..:) How about that?
