Charred Eggplant Recipe

Charred, roasted eggplant recipe straight from North India! Cooked in mustard oil & spices, this is one delicious eggplant recipe.
One of India's most loved and famous recipe - baingan bharta, or can be translated as mashed eggplant. 
This is a North Indian recipe in which eggplant is taken and fire roasted till it becomes soft and mushy and then it is cooked further in some mustard oil with some spices, ginger, garlic, onions and tomatoes. 


You can pair this with some naan for that restaurant style meal at home or you can pair it with some quinoa or rice, along with some lentils. This is a vegetable recipe - not a curry or gravy type. So make sure you match it with some lentils or beans. Check out my recipes and you will have lot of options for lentils recipe.

Ingredients -
​
1. Organic eggplant - 2 medium (see in video my size)
2. Organic tomatoes - 4 roma tomatoes
3. Organic onions - 1 big onion
5. Garlic (1 whole garlic)

6. Green chilies - 2-3 
7. Ginger - 2 in chopped
8. Org. cilantro - fresh chopped


Spices, Seeds & Oils -

1. Organic mustard oil - 4 Tablespoons
2. 
Cumin seeds - 4 Tablespoons
3. Org, turmeric powder - 1 Teaspoon
4. Org. cumin seeds powder - 1 Tablespoon
5. Coriander powder - 1/2 Tablespoon
6. Org. Himalayan sea salt - 1 to 2 Tablespoons (add less first, adjust at the end)
7. Org. red paprika - 1 Teaspoon
8. Fenugreek powder - 1 Teaspoon
9. Black pepper - 2 Tablespoons


Top It With -

1. Organic cilantro & lemon juice

NOTE: Roast your eggplant long enough until it is very soft and pulpy


How To Pair?

You can use this recipe with one of my rice recipes (click on the categories to the right of this article), you can have it as a wrap in lettuce or kale! Very healthy & super tasty! You can pair it with some gluten-free tortillas or naan.
