Khichdi is one of India's most loved recipe and for some really good reasons; it is light and tasty and is a great tool for digestive health so much so that it is often the first recipe given to babies in India. It is great when one is feeling sick and needs light meals while recovering to avoid any digestive upsets. Usually khichdi is made with boiling rice and lentils together and at the end, tempering is added to enhance the flavor and health benefits. Now, in my recipe, I go a step further to not just add more flavor but to also add more health boosting benefits of this recipe. My recipe includes good amount of onions, garlic and then spices to add more sulfur in the diet as sulfur is THE nutrient to prevent diseases like cancer and inflammation. It is also very important mineral for beautiful skin and hair, so add the onions and garlic as much as you like!! Ingredients - 1. 2 organic red onions 2. 1 whole garlic or more 3. Moong dal or any lentil - 1 1/2 cup 4. Rice (any of you choice or basmati) - 1 cup Spices and oils - 1. Turmeric 2. Cayenne 3. Himalayan sea salt 4. Cumin seeds 5. Bay leaves 6. Question: If you are using brown basmati Indian rice, how long do you cook the rice/moong beans? Do you still cook them together?

Yes! Ideally, we will cook them together as that is what is required to make khichdi. Make sure to soak the lentils and the brown rice for couple of hours - it has nutritional benefits (reduces arsenic in rice and phytates in lentils), and will reduce your cooking time as well.
