Moong Khichdi (Rice & Lentils)

Easy & quick comfort food; Lentils, rice, onions & garlic give this recipe the 'wow' factor while keeping it light. Inc. video.

​Khichdi is one of India's most loved recipe and for some really good reasons; it is light and tasty and is a great tool for digestive health so much so that it is often the first recipe given to babies in India. It is great when one is feeling sick and needs light meals while recovering to avoid any digestive upsets. 


Usually khichdi is made with boiling rice and lentils together and at the end, tempering is added to enhance the flavor and health benefits. Now, in my recipe, I go a step further to not just add more flavor but to also add more health boosting benefits of this recipe. My recipe includes  good amount of onions, garlic and then spices to add more sulfur in the diet as sulfur is THE nutrient to prevent diseases like cancer and inflammation. It is also very important mineral for beautiful skin and hair, so add the onions and garlic as much as you like!! 
 

Ingredients -

1. 2 organic red onions
2. 1 whole garlic or more
3. Moong dal or any lentil - 1 1/2 cup
4. Rice (any of you choice or basmati) - 1 cup

Spices and oils -

1. Turmeric
2. Cayenne 
3. Himalayan sea salt
4. Cumin seeds
5. Bay leaves
6. Organic coconut oil

Top It With -

1. Organic apple cider vinegar

DO share with your pooches too - why give them 'plastic-food' when they can have all the protein, fiber, turmeric, healthy fat in one dish! Did you know that lentils are much easier on your dog's kidneys and stomach to digest?  And that too, home-cooked and fresh off the stove! Imagine the difference between this and that of 'dog-food.' Ah, the Western concepts..!!
1. Add moong lentils and rice + water.
2. Add bay leaves.
3. When cooked, add turmeric.
4. Tadka/tempering ingredients.
5. Make the tadka...and saute for few mins till soft.
6. Mix tadka and organic apple cider vinegar. Enjoy!

Question: If you are using brown basmati Indian rice, how long do you cook the rice/moong beans? Do you still cook them together?

Yes! Ideally, we will cook them together as that is what is required to make khichdi. Make sure to soak the lentils and the brown rice for couple of hours - it has nutritional benefits (reduces arsenic in rice and phytates in lentils), and will reduce your cooking time as well.

For cooking time, say you are using pressure cooker - then shoot for good 4 whistles on medium-high and then close the heat and let it cook. Once you open it, check and see. You may need to add more water and mix. If at that point, it is still slightly uncooked, then close it again and warm it on low for 15 mins. But you probably won't need to do this as 4 good whistles should be enough. I can only tell you about the pressure cooker method because that is what we use and that is the best for cooking khicdhi, lentils, beans, rice pilafs, - super fast and energy saving method!
