I absolutely love poha! - I think every Indian can tell you that poha is one of their favorite dishes. And why not? It is tasty, light, quick, easy and healthy to make. It is eaten as breakfast or evening snack and sometimes, if one is in the mood for light lunch or dinner, or especially after fasting, poha fits the bill perfectly as a light meal for the tummy!
Poha is made with flattened rice - more like rice flakes, to describe better. To give this dish its wonderful taste, fragrant curry leaves, along with some mustard seeds, onions, turmeric, etc. are added. You can also add some fresh vegetables like boiled potatoes or green beans or green peas. Make it yours with endless additions and taste possibilities! Why are curry leaves great? Curry leaves help with healthy hair, are a great digestives, are anti-bacterial and excellent addition in meals for diabetics. They are also great for healthy eyes, and help blood circulation. Rich in iron, they help with anemia as well. Curry leaves are also called as 'sweet neem' and they have anti-cancer properties, as well as helping in protecting the liver. Due to their many medicinal properties, curry leaves are used in Ayurvedic formulas for eye problems, diabetes, cancer, liver, digestive issues, skin pigmentation and many more! So, the bottom like is this - curry leaves are GREAT for you and now that you know, you can start with this recipe! Ingredients - 1. Organic poha (Indian flattened rice) - 3 cups - rinsed in water (see video) 2. Curry leaves - handful! 3. Organic yellow or red onions - 3 4. Organic medium tomatoes - 2 5. 1 bunch organic cilantro 6. Peanuts - handful Spices - 1. 2 teaspoon mustard seeds 2. Turmeric - 1 Teaspoon 3. Cayenne - per taste - try 1/3 teaspoon first, then add more. 4. Green chilies - 2 5. Organic Himalayan sea salt - 2 Teaspoon 6. Organic unrefined coconut oil - 6 Tablespoons Simple steps - 1. Servings - Single (Adult portion size) - This would serve approx. 4 servings. 2 people (Adult portion size) - approx. 2 serving each Compost - Plz. start composting. Imagine if all of us stopped using plastic bags for such reasons? How Earth will change overnight? If you don't have compost bin in your home, you can make one. Or, you can simply give to the plants outside. They will eat the nutrition and your garden soil will thank you for it.

Question: I have dry curry leaves only. The last time I threw them into a recipe as is, they stayed tough. How do you reconstitute dry leaves, please, to get that wonderful soft, flavorful quality?

No problem! Do exactly as I did in the recipe - add them in the beginning so they have time to sauté, soften and get some oil in them. You probably added your dry curry leaves later on in the cooking stage when you used them. So, this time, just do as the recipe goes and you should have no problem. Also, see my recipe of Onion Chutney - I used dry curry leaves, but because I added them after the oil, the onions and tomatoes (their juices).....so they softened very well. Watch that video and it will help you a lot. -Somyata.

Oh my god. I made poha tonight, and my husband had some too. He called it “amazing”. I call it magical. Scrumptious. Diwali-worthy. Wow. I used my dry curry leaves, and cooking them in the oil did the trick — they were soft and aromatic. And I’m so glad I loaded it up with plenty of cilantro. Thank you for a major winner!
