Ah! Potato-leek soup - who doesn't like creamy potatoes in a soup? If you are a potato lover like rest of the world, then yes, have your favorite potatoes but just make sure it is in recipes like my potato-leek soup. Now, I must warn you this is a fibrous soup; so at the end, when serving, just add some more water or perhaps, you might just think its fine and enjoy it as is. Either way, make it and enjoy the dense taste of nutrients - thanks to the perfect combination of spices and herbs in this recipe. Ingredients - 1. 2 Organic leeks 2. 2 Organic yellow onions 3. 2 whole garlic 4. Organic spinach 5. 2 Organic potatoes -medium 6. 3 Organic carrots 7. 3-4 Organic celery stalks 8. 2 Organic green onions 9. 1 whole fresh bunch oregano Spices and oils - 1. Organic coconut unrefined oil - 6 tablespoons 2. Organic Himalayan sea salt 3. Cayenne -1 Teaspoon first if you don't know or not spice lover - adjust later. 4. Thyme - 1 Teaspoon 5. Black pepper Top with - 1. Chives, green onions & lemon juice Simple steps - Watch the video/pics for step-by-step recipe. Servings - This makes enough so you can keep in fridge and have it for 2-3 days. If the soup bowl is the size shown in the video, then it makes about 6-7 servings. To reduce the quantity - minus 1 potato & 1 leek and this will make a huge reduction. Do not skip the garlic, onions, green onions, oregano as these are what makes this soup such a powerful cancer fighter! To increase the quantity (if making for family/guests) - Inc. potatoes & leeks - you can add bit more of oregano too. Compost - Plz. compost (your FREE organic fertilizer) OR if you live in apartments/condos, then just throw the ends between tall grass or bushes. Earth will be SO happy and will thank you for the extra nutrients. Plus, let's stop using plastic bags for such ridiculous reasons! Have Dogs? Do serve to your dogs too - add plain rice in a bowl and add bit of this. Let them enjoy this fresh food too! The more fresh home-cooked food you add to Fido's diet, the healthier your dog gets. Add on!!! But add this soup very little as it is fibrous so like 1 small teaspoon for 15 lb dog to start with.

I am making this today! Have never seen so many beautiful vegetables in a potato leek soup! I also love how you added the little herb ‘flower’ at the end — looks like an oregano stem pinch perhaps...

I made this glorious soup, and was able to save some for tomorrow and more for freezing. Looking forward to that one more bowl on a chilly day to come! The spicing is just perfect; I never thought so much oregano would work but it does, wonderfully. And all those vegetables make it rich and satisfying, nothing like the thin potato leek soups I’m used to.
