One of my favorites! I (and my dogs) loveeeee sweet potatoes (Ipomoea batatas), but who doesn't? They are rich in vitamin C, copper, manganese, fiber, magnesium, vitamin B5 & B6 and beta carotene. However, to get the beta carotene to convert to vitamin A, you have to use some good fats like coconut oil. This is crucial and most health sites and blogs won't tell you about this very important fact and that is because most people don't even know about the right way to cook and convert beta carotene in our diet to vitamin A - something sweet potatoes can greatly offer. Another great thing I like about this recipe is that it is so easy and quick. Recipes like this one can be made any day of the week and are also a great way to increase your intake of root vegetables like sweet potatoes. Also, another thing to learn is that the longer you cook the sweet potatoes, the sweeter they get - yup. This is because they break down from starch into sugar called maltose, which is sweet (this is why they are used in baking!). This recipe cooks the sweet potatoes fast - boil and sauté. Done. Just make sure you cut the sweet potatoes in smaller pieces so they can boil and sauté quickly. Sweet potatoes also have a very low glycemic index which makes them more desirable and easier to digest. I included some kale and topped it with some lemon juice as the vitamin C in the lemon juice (and the red bell pepper) helps the iron in kale to get absorbed much better by your body. This was one of the first recipes I made of yours and it remains a go to top favorite. 6 months of cooking vegan/gluten free and your site is the only one I can count on to be delicious every time. I find most others lack the flavor and the extra ingredients that are so healthy for you. Thank you Somyata for sharing your knowledge and talent! I'm eating this as I write this comment. This was sooooo EASY to make and the finished product is sooooo DELICIOUS. When I saw the few amount of ingredients I thought "hmmm, I might add more herbs," BUT it wasn't at all necessary. You pushed the flavor over the top. OMG - my husband loves this recipe and is excited for us to cook it together for our extended family Thanksgiving this week! Normally he would never agree to cook anything as a team. Should be nice and simple and just what we need as he recovers from a bad cold and bad back. Yay!

We did it! It’s so beautiful and tasty… can’t wait to see how our family likes it. I found some fresh thyme in the fridge, so used that. Yum. One small glitch: The sweet potatoes on the bottom were mushy. That pot was heavy, so my husband held the lid while I poured out the water. I think we didn’t get it all. Just a small issue, and it still looks great.
