Easy & quick and very tasty eggplant recipe. Roasted eggplant (baigan) in this recipe adds an smoky flavor along with aromatic Indian spices.
I love eggplant but not just any eggplant recipe - I specifically mean baingan bharta, which is charred eggplant cooked with a mix of spices and ginger-garlic! Yummy! It is one of the MOST famous recipes from India and in fact, if you go to Indian restaurant, you will definitely find it on the menu. The smokey smell from roasting/charring the eggplant and the soft pulp then cooked in spices in one "to-die-for" dish! Pair it with some naan or a recipe like my onion rice or tomato rice, and you just served yourself some meal better than any Indian restaurant! On top of that, my recipe is loaded with anti-cancer black seeds; they add so much taste and aroma, and they are an excellent addition to dishes like beans, lentils, veg korma, curries, and so on. And then we have more powerful goodies like cumin seeds, turmeric, cayenne, garlic, green chilies, etc - all enforcing taste and.....health! Ingredients - 1. Organic eggplant 2. Organic tomatoes - 4 3. Organic onions - 2 5. Garlic (1 or 2 whole garlic) 6. Green chilies - 2-3 Spices, Seeds & Oils - 1. Organic mustard oil 2. Black seeds 3. Cumin seeds 4. Org, turmeric powder 5. Org. cumin seeds powder 6. Coriander powder 7. Org. cayenne 8. Org. Himalayan sea salt 9. Org. red paprika 10. Garam masala (optional) Top It With - 1. Organic cilantro & lemon juice Simple steps - Watch the video/pics for step-by-step recipe and exact measurements. NOTE: Roast your eggplant long enough until it is very soft and pulpy; my first 2 eggplants were perfect but the next 2 that I did, I rushed and were little less roasted and bit hard so I lost lot of flavor and that smokey smell which I wanted and would have loved - the main aspect of this recipe! So, roast well! and give it time. How To Pair? You can use this recipe with one of my rice recipes (click on the categories to the right of this article), you can have it as a wrap in lettuce or kale! Very healthy & super tasty! You can pair it with some gluten-free tortillas or naan.

I notice the video shows ginger in the paste, but it got left off the ingredients list here - FYI to those of you making this delicious recipe.

Thanks a lot Pamela for pointing it out here! I wil update it tonight....Also, I sent you the exact grill I used for charring....check it out. Once your eggplant is very well charred, that is when this dish comes to LIFE!!! One of the MOST famous N.Indian recipes...ever!
